Singing Squash Sauté


Singing Squash Sauté

serves 6 as generous side dish

Ingredients:
1 package ranch dressing mix
1/8 c vegetable oil
1/4 c vinegar
1/2 tsp texas pete hot sauce (or to taste)
3 small or 1-2 medium yellow squash, cut into 1″ rounds (halve if larger than an inch)
3 small or 1 medium zucchini, cut into 1″ rounds (halve if larger than an inch)
1/4 c chopped onion
4 tsp chopped garlic
2 T butter
2 medium tomato, coarsely chopped
1/4 tsp dried marjoram
1/4 tsp salt
1/4 tsp pepper
1/2 c shredded Parmesan cheese

Directions:
Preheat oven to 400. Make dressing marinade by mixing dry mix, oil, hot sauce and vinegar in large bowl.  Add squash and zucchini into bowl to marinate.  In large skillet, saute onion and chopped garlic in butter until onion is soft and translucent.  Add the mixed squash slices and saute until it is nicely browned, turning often.  Add tomatoes, salt, pepper and marjoram until hot. Spoon out vegetables into large flat baking dish and sprinkle the cheese on evenly.  Brown in oven under broiler or in oven. When cheese has melted, serve dish.  

This dish is very similar to ratatouille, and you could easily substitute or add other veggies into the mix, such as eggplant or greens.
